Sara L's Mango Salsa

150g fresh or canned mango
Tsp grated lemon or lime rind
Tsp lemon or lime juice
1/2 finely diced sweet red pepper
1/2 minced or finely chopped red onion
1/4 to 1/2 cup finely chopped fresh mint leaves
Tsp olive oil
(You can also add some finely chopped jalapeno or a pinch of cayenne for a bit of a kick!)

Mix ingredients and you're done. (Now THIS is my kind of recipe!) Excellent for adding some punchy flavour to a meat dish for very few calories. Make ahead of time and refrigerate for a few hours to let the flavours meld. This makes enough for 3 or 4 servings depending how much you like it!
